Zoku Pop Maker – Your Best Summer Kitchen Gadget for Kids


Parents, I have to share my favorite summer kitchen find that is a must if you have children! Its the Zoku, Quick Pop Maker.  Forget about store bought sugar laden or sugar free chemicals and ingredients. Now you can have beautiful, gourmet, healthy frozen treats. The Zoku allows you to use your own ingredients from fresh juice, fruit, greek yogurt, milk and kefir, so you know exactly what you are eating.  

Follow these simple steps to create your Zoku frozen pop:

  • As soon as you get home put the pop maker in the freezer for 24 hours so its ready to go when you get the urge to make your healthy treat.
  • Remove from freezer and insert the pop sticks into the three mold areas. If you’re using fruit, place the fruit in before inserting the sticks.
  • Pour the filling of your choice into each mold and wait 7-9 minutes for the pops to freeze. If you want to create a layered pop wait until each layer of juice freezes before adding another.
  • To release your pop, turn the orange super tool clockwise and enjoy!

Finally, the Zoku is not new but as of last summer it was new to me.  So if you already know about this cool gadget wonderful! And if not, seriously pick one up! They retail for $49.95 and have lots of cool accessories to make a great activity with the kids and snack for you and your family.

My Favorite Zoku Recipe

Frozen Mimosa Pops

For the orange juice/champagne layers:
2 ounces champagne
8 ounces orange juice

For the strawberry layer:
½ cup fresh strawberries
3 tablespoons orange juice

Pour in strawberries and OJ – freeze

Combine the champagne and orange juice – freeze and enjoy!

Quinoa Berry Summer Salad with Tangy Coconut Dressing


Hi! Hope everyone is having a fabulous week! Finally rain, rain go away! Its a beautiful sunny day here in Dallas and summer is finally upon us.  I have a great summer salad recipe that looks good, tastes good and more importantly is good for you! Not only does it look impressive but it’s super fast to through together! Antioxidant rich kale, berries and quinoa add texture and color to this cool summer salad.



Quinoa Berry Summer Salad with Tangy Coconut Dressing



  • 1 cup mint, finely chopped (optional)
  • 1 1/4 cups cooked quinoa
  • 1 (6 oz) package  Blackberries or Blueberries
  • 1 (6 oz) package Raspberries
  • 1 bunch Lacinato kale
  • Top with slivered almonds


  • 1 (8 oz) can cream of coconut milk
  • 1/4 cup apple cider vinegar
  • 1 (2/3 oz) package Simply Organic dried Italian salad dressing mix



  1. Rinse ingredients.  Roll the kale leaves into a cigar and slice into fine ¼ inch shreds. Gently toss kale, loosely packed mint, quinoa, blackberries and raspberries together, and then add just enough dressing to coat the salad. Serve immediately.


  1. Whisk apple cider vinegar and coconut milk with Italian salad dressing seasoning mix. 

Serve with Ice tea and Enjoy!

Spicy Oven Roasted Chickpeas

Hi Everyone!! Kathy here! I apologize I’ve been away for some time! Recently, I was able to travel to Europe with my daughter and that was an incredible trip! I’ll post some pics and write a blog about that very soon! And even more recently I had the opportunity to travel to Chicago and study under some true Pilates Masters.  That was an amazing experience and reinforces my decision to become a Pilates instructor. I know I will always be practicing, learning and growing, and sharing the knowledge with those around me! It makes me giddy and happy knowing I chose the perfect career!!!

So on to this weeks blog, I love salty spicy crunchy snacks and they have to be healthy! I eat chick peas everyday as a source of protein and fiber. Usually a sprinkle or two on my salads. Ive been looking for baked chick peas at my grocery and have yet to find any so off to the web I went, and after combing a few different recipes and a little trial and error, I really love the recipe below.  If you don’t love spice like a do, just scale back on those ingredients a little bit! Also try sprinkling these on your salad or in soup! Delicious!


Spicy Oven-Roasted Chickpeas
about 2 cups


1 15 ounce can organic chickpeas
1 tablespoon of olive oil
1/4 teaspoon garlic powder
1/4 teaspoon dried onion
1 dash paprika
1 teaspoon chili powder
1/2 teaspoon cayenne pepper
1/2 teaspoon sea salt


  1. Preheat oven to 400 ° F.
  2. Drain and rinse chickpeas in colander. Remove skins from peas and pat dry with a paper towel.
  3. In a bowl, stir chickpeas and ingredients until well blended.
  4. Place chickpeas on a baking sheet and bake for 20 minutes. Remove from oven and toss peas on cookie sheet every 5 minutes for the next 20 minutes!

Confession Time!

I am fascinated with the art of burlesque. I love the art of the seductive dance, the lace, the corsets, the show and the out and out athleticism and showmanship it requires to perform burlesque.  Last week, I was lucky enough to attend Dita Von Teese’s show Strip! Strip! Hooray! in Dallas at the House of Blues.  The show was amazing! Dita’s dance, costumes and stage props were like nothing I have seen before.

So my confession, I’ve always wanted to learn burlesque! I’ve signed up with a couple of the other HH ladies for Burlesque school with a mini performance at the end of the training.  My strip tease will end with my pasties over my bikini top and shorts for sure! But what a thrill and why not try something new and out of my comfort zone!

And after seeing Dita’s show with women of all shapes and color, I’m thinking why not!?

My New Kitchen Gadget – A Coffee Frother!



This week, I have a review on a product I have been wanting to try for a long time. I love drinking lattes and cappuccinos on occasion but hate the limited milk options (I don’t drink dairy milk) and the expensive price for a cup of coffee. So recently I researched electric milk frothers and bought the Secura milk frother/warmer.

The Secura milk frother is so easy to use. Basically plug in, pour milk, and hit a button and within a couple of minute I have light frothy almond milk for my latte or cappuccino! Its so simple to use and only 1 part to clean up! I highly recommend it! I bought mine here.

Now, next on my list mastering some fun coffee art designs for an extra treat!

Why I Love Pilates <3

Every week, I want to write my bog on Pilates and why I love it so much. But I get bogged down because there is so much I want to say and haven’t been able to articulate without writing a book.  

So it finally came to me, why don’t I just share the top three reasons I love Pilates and go from there! Keep it simple!

1. Pilates is “A thoughtful way of movement”

Pilates or Contrology is a system of choreographed, flowing, and precise movements developed by German-born Joseph Pilates, (born 1880). Pilates works by developing and bringing awareness of our body’s, posture, core strength, deliberate movement, stamina and flexibility. This system enables us to achieve a functional fitness which can be carried through everyday movement, other forms of exercise, injury, any physical limitations and age is never a factor..

2. Pilates develops long, lean muscles and strengthens the Powerhouse

Pilates builds strength from the inside of the body outward.  Its a restorative system that heals the body from the inside, out.  An additional benefit of Pilates is the physical transformation which occurs. Muscles develop long, lean and balanced throughout the body.  Posture is restored and an incredible core or Powerhouse develops which holds the organs in proper place and protect the spine.

3. Pilates is for Every “Body”: Every day

Pilates is a great practice to develop at any age.  You can practice at home, in the gym, in a studio, privates or classes.  Pilates also teaches proper breathing and how to take in the most breath possible while maintaining an engaged core.  This aspect alone enriches the body and brings longevity to life!

Sweet & Spicy Cinnamon Kale Chips

Hi Everyone! Kathy here! I’m so geared up for spring! I’ve kicked up my workout routine and intensity  and cleaned up my diet.  Lots of salads, juice and fruit.  The only problem is that I still have a major sweet tooth to fight.

I tried the chocolate kale chips I found at Whole Foods to satisfy my sweet tooth and I was not impressed! I started thinking – what if I replaced the salt and olive oil in my regular recipe with cinnamon, sugar, and coconut oil.  Delish!!! A total success!

Now the only problem I have is eating too many!

Sweet Cinnamon Kale Chips

  • 1 head of kale (your preference)
  • 2 tablespoons coconut oil
  • 1/2 tsp organic cinnamon
  • 2 tablespoons coconut palm sugar
  • Pinch of sea salt
  • Optional – I love spice so I added a couple of shakes of cayenne! The sweet, spicy and crunch of the kale is sooo good!



1. Preheat oven to 400 degrees and line a baking sheet with parchment paper.

2. Wash and dry the kale and tear into pieces.

3. Toss all the ingredients in a bowl until coated. Spread the kale pieces onto the baking sheet.

4. Bake 9 to 11 minutes, tossing the kale periodically, until crisp. Remove from oven and let cool 10 to 15 minutes.

5. Enjoy!

Gratitude is My Attitude


Sometimes we take life, health, family, friends, work and just about everything else under the sun (including the sun!) for granted. In the last year I have made a practice of being (more) grateful for everything and everyone who touches my life (good and bad).  This practice has transformed so many of my relationships for the better and my life is so much sweeter for it! My family ties are stronger than ever, friendships have flourished and my new business is growing day by day, I feel so blessed!!

This past weekend I traveled to Cabo with my family and we had the best time sharing new experiences in a beautiful ocean side setting.  I watched my daughter’s eyes light up as we watched baby whales jumping out of the ocean from the beach. A moment we will never forget.  

My point is, had I not been adhering to my new life practice of being grateful for what I have, and at times its been very challenging -those moments and experiences would have never happened. Trust me, it is a practice.  Its not something most of us are born with but it can be easily be learned and you will see your life so much richer and satisfying than ever before! 

I want to take a moment to express my deepest gratitude for my life, my family, my health, my friends, my business and you for reading my blog.  I hope you can take away something positive from this.

Tips for Creating a Life of Gratitude

  • Make a list of 10 things everyday you are grateful for: include family, friends, job, etc.
  • Read your whole list everyday and continue to add to it.
  • If some one has hurt you, thank them (mentally) for the experience it brought you and release them and yourself.
  • If you are unhappy with something or someone, someone hurts you, or you let your ego get in the way of circumstances, those are the most important times to find a way to be grateful and change your thinking.

I hope those tips are helpful and if not, there are many books out there, that can help you find your way. I especially love anything by Louise Hay.

Cilantro Jalapeño Hummus

My go to juice bar in Dallas prepares and sells the most delicious fresh salads, soups and dips.  My favorite dish/dip is a trio of hummus.  Two of the dips are tasty but one in particular is out of this world.  

One evening at home, I was really craving this hummus and so I decided to play around and see if I could duplicate it.  Well guess what?! This recipe is spot on!!!!  Spicy, delicious and healthy too!!!

Cilantro Jalapeño Hummus


2 (15 oz) cans organic garbanzo beans, drained and rinsed

2 large jalapeños, chopped and seeded
2 tablespoons minced garlic
2 cups roughly chopped cilantro

1/4 cup EVOO
1/4 cup of fresh lemon or lime juice

Sea salt to taste



Place all ingredients in a food processor.  Blend until smooth and serve with veggies and your favorite healthy cracker.

Side Notes:  

This recipe will keep in the fridge for up to a week but you will probably eat it before then because its sooo good! And of course the recipe tastes better after storing overnight!

New App I Love! Popsugar Active

 Hey everyone! Kathy here! Just wanted to share a quick fitness app that I found and love. 

Its the Popsugar Active App which makes working out convenient and fun.  There are tons and tons of workout videos that are continuously updated.  I love the Victoria’s Secret Booty Burn Model Workout and the yoga workout for back fat.  

You can create and customize your own fitness routines with all of the videos which range from strength training, running yoga and more.

Wish I had more to share this week but I am completely and creatively drained! The days leading up to the photo shoot can be stressful and now I’m straight into completely my final weekend for Gyrotonic training.  That’s a wrap!
