Roasted Pumpkin Seeds

Hi Everyone! Fall is here and with it, cool air, Halloween, and pumpkin patches filled with pumpkins everywhere! We carve them, decorate for fall with them and yes you should eat them too! 

When you are finished carving that pumpkin don’t throw away the delicious and nutritious insides! Roast the seeds and puree the pumpkin which can be subbed for any canned pumpkin recipe and so much better for you!

 Roasted Pumpkin Seeds

  1. Scoop out the innards of your pumpkin. Separate the seeds from the pumpkin flesh and strings. Toss the strings and set aside the meat for pureeing.
  2. Wash the seeds well in a colander and rub them between your hands to rinse completely.
  3. Place the seeds in a medium pot.  Cover the seeds with water and add a teaspoon of salt. Bring to a boil, then lower the heat and simmer for 10 minutes.
  4. Drain the seeds in a colander, wipe with paper towels to remove moisture and place evenly on a cookie sheet to bake.
  5. Preheat the oven to 350 and bake 15-20 minutes stirring frequently.  

Now the fun part- seasoning!

Before baking, drizzle the seeds with olive oil. Then pick your choice of seasoning!

  •  Savory: Garlic salt and Worchestershire sauce
  • Tangy: squeeze of fresh lemon juice, Mrs. Dash or lemon pepper and pinch of sea salt
  • Sweet: 1 tsp cinnamon, 1/2 tsp ground ginger, and 1/2 tsp brown sugar
  • Spicy: 1/2 tsp cayenne pepper, 1/2 tsp salt and 1/2 tsp pepper
  • Natural: Dash of sea salt

Sometimes shopping is my cardio….

Hi! Hope everyone is having a wonderful week. Ok so I got a really great shopping tip today from one of my clients and wanted to share with all of you. My amazing client and friend AK, for short owns and operates Kazy’s Gourmet Sushi & Seafood.  She supplies most of the finer restaurants in town with their fresh seafood and sushi and runs a Japanese restaurant and small grocery store. She is a very smart business woman so I listen when she gives me tidbits.

Today she explained to me how she shops online and basically never purchases anything until it goes on sale, or has a rebate and some type of purchase offer which happens about 85% of the time. Her tip for that is filling up your cart or wish list and then going back to purchase once the items have been discounted and she checks them every few days. That seems easy enough right? and I can’t tell you how many times I’ve made purchases only to see them go on sale right after.

Another way she saves a little money and actually receives money back is through Ebates. Ebates is a free online company that gives you cash back for accessing your favorites store through their site and making purchases. Companies that partner with Ebates will offer anywhere from 1 to 20 percent back, or more. There is no membership fee, and they also feature coupons and other exclusive offers.

Here’s an example of how it works: Retailer gives Ebates 2% of every sale that gets referred from Ebates. So if Ebates sends a customer to Retailer, and that customer buys a $500 computer, Ebates will make $10 on that sale and mail you a check for half of that $5. Its a great deal for just clicking through their site to purchase! Retailers include  Walmart, Target, Bestbuy, Barnes & Noble, Kohls, Gap Kids, Justice, Saks, Old Navy, Lego Store, Petco and so many more!

I signed up tonight, which consists of typing in my name and email and received $10 gift card to my choice of retailer. I choose Target. Meal Planning 101

Meal Planning 101

With school back in swing and me working full time, meal planning is the only way to provide a healthy home cooked meal for my daughter and dad, plus save time and money.  I try to plan and to cook 3 or 4 meals at home and grocery shop just once a week.

Kathy

1. Grocery List/Meal Plan.

  • Look at your calendar for the upcoming week.  Note how many dinners you will need to make, and anything else you need to shop for (breakfast, school lunches, snacks, get togethers, etc.)
  • Decided what (2 or 3) proteins you want to use and plan your meals accordingly.
  • Pick proteins that can be cooked once and used twice, for example lettuce wrapped tacos and squash spaghetti – use the same protein source.
  • Check your refrigerator, pantry and freezer and note what needs to be used.
  • Review your grocery store sale ad in advance. Can be a good savings especially at Whole Foods.
  • Keep your menus simple during the week.
  • Use a form grocery list already completed with your kitchen staples.
  • Add items as soon as you run out.

2. Shop Smartly.

  • Don’t forget your grocery list and coupons.
  • Shop on a day that works best for your schedule. Weekdays at 5 are usually not it!
  • Review the sale ad in advance.  Again.
  • Don’t overdo the fresh produce and end up throwing valuable money and fruits and veggies out.   Always keep your freezer stocked with frozen organic vegetables for quick side dishes or ad-ins.

3. Eat healthy!

  • Plan meals and snacks using healthy basics.
  • Limit processed or prepared foods.
  • Serve at least one serving of vegetables and/or fruit with each meal.
  • Always keep your kitchen well-stocked with organic and healthy basics.
  • Limit use of microwave – most items can be warmed just as quickly on the stove (enamel cast iron pot) or (cooking sheet) in oven.

4. Save time.

  • Use leftovers for lunches or as part of another meal.
  • Pre-wash your fruits and veggies, store in bowls in fridge (rather than drawers) for quick healthy snacks.
  • Use time-saving appliances: slow cooker, rice cooker, toaster oven.
  • Rotisserie chickens are great too and can be used a multitude of ways.
  • Salad bars can be a big time saver for chopped fresh produce.
  • Grocery delivery.

It’s time to Organize and Simplify My Life!!

Happy Thursday Everyone! Wow! This month has been amazing! My little girl turned 6 and she had the most amazing themed birthday party. Mermaids and pirates in the pool! She was sooo incredibly happy, it made all the planning and running around in Dallas summer heat well worth all the work! From there I jetted (yes jetted!) off to LA with the Healthy Housewives for some amazing meetings in Hollywood! That trip required major packing and choosing all the right outfits! (okay maybe I overpacked a bit)! From LA back to Dallas to focus on getting my studio open! And there are so many details and many things you don’t even consider when opening a business – until you already needed them.

What I’m getting to is that while my life is the absolute best its ever been and just gets better day by day (because I say it aloud and work for it) and I’m so busy which is great for me too! My personal life organization and home organization have fallen miserably sadly out of control.

For example, most nights rather than cook dinner (because I didn’t plan, I end up picking up a (healthy) dinner (expensive – because it adds up daily).  I spend some play time with my daughter and before you know it, its bed time and I’m exhausted – half of the time I fall asleep with my clothes on with no proper ending of the day and no preparation for the following day.  I wake up in rush to get ready and my day has already started behind.

This morning, I woke, started with my rushing around and decided that’s it! Why I’m I always rushing, why can’t I anticipate and plan better? Well, I’m just not wired that way, I’m a creative type, more of a feeler than a thinker. Therefore, I’m always on the reactive! But that is not going to fly now, especially being a single mom business owner, with a very busy child, 3 dogs, a cat, a fish, a bird and oh ya a house.  Time to learn a new way before I sink any deeper! I will be the planner and in control of my time and daily personal routine!

I hope I haven’t bored you all, with my me, me blog but I know I’m not the only one out there feeling overwhelmed and angry with themselves for living this way! Its time to take control and it can be done!

My first step to getting on track! Google – “organization for my life” – after lots of silly tips and trying different search words – I came across http://andreadekker.com.  Self proclaimed “list maker and life simplifier”! Just what I needed! I will call her my Angel of Organization!

Her site has tons of useful information and make sense to me and the way I need to run a better organized life! She has free print outs for your planner with lists that actually keep you organized (not like the ones that come in your organizer – they never work for me) and you can even customize them again for free!

1. Plan Ahead

If you’ve been reading my blog for more than a day, you know that I’m a huge advocate for planning ahead — even more so now that I’m a mom.

Menu planning, top-5 to-do lists, cleaning, blogging, family vacations, holidays, etc. — they are all simpler when I plan ahead.

There are so many things we can NOT plan for or predict, so anything you can do in the present to make the future less stressful will ALWAYS help to simplify your life.

2. Do It Now

White Skinny Fruit Sangria

 

 

Hey everyone! Kathy here.  It’s been a long hot week in Dallas.  While we coast through most days, the heat seems to make everyday tasks turn into stressful mountains to climb and just being outside for a few minutes can really take a toll.  Once home and in the air conditioning, my solution to cool down and de-stress…make a “skinny healthier” version of white fruit sangria.  This sangria is light and refreshing and the perfect splurge with no added sugar, canned soft drink mixes, or syrupy liquors.   And if you are on a health and fitness plan this light and clean drink will not derail all your hard work. As with everything, moderation is key!  

Ingredients:

  • 1 bottle Sauvignon Blanc – not an expensive bottle – but opt for organic if you can find it 🙂
  • 1 bottle Vino Verde (great inexpensive bottle of Portuguese wine that has a light fizz $5-10)
  • 2 ripe organic peaches, sliced
  • 1 pint organic raspberries, sliced strawberries or blueberries (you choose)
  • 2 kiwis- peeled & sliced
  • Several sprigs of organic mint
  • Liquid Stevia – (I buy mine at Whole Foods in the baking section)
  • There are no hard and fast rules on the fruit, apples and oranges work too.  Use whatever you have on hand or favorite organic or local farmed fruit. 

Add the sliced fruit and mint to a pitcher.  Add 3-4 drops of stevia, then add the wine alternating between the two.  Refrigerate for at least an hour (the longer the better).

Serve & enjoy! I really love the Mason jar glasses and red/white paper straws, great for a BBQ or if serving a sit down dinner feel free to break out your favorite wine glasses because this drink is delicious to taste and beautiful to see! And not so bad on the body!

Health Benefits of Epsom Salt Baths: Relax and Detox

With summer fast approaching, I’ve stepped up my workouts and you probably have to. Tired and achey muscles pretty much sum it up for me.  To get feeling better and moving around a little faster, I do what I always have done and take a relaxing Epsom salt bath.  But what are Epsom salts anyway and how exactly do they help? And do they really detoxify the body? After researching the Epsom Salt Council website this is what I found out.

Epsom Salt

Epsom salts are not really salt at all.  It is a mineral made up of the compound magnesium and sulfate.   Magnesium and sulfate both play essential parts in our body function and can be easily absorbed through the skin. In an Epsom salt bath, the magnesium sulfate is absorbed through the skin which aids in the detoxification process.

The Process

A detox bath is one of the easiest at home therapies that can be done to aid and jumpstart our body’s own natural detoxification process. The skin is the largest detoxification organ in which toxins can be drawn out through perspiration. The detox bath stimulates your lymph system and increases oxygen and blood flow to your body.  This detox bath coupled with the absorbtion of the magnesium sulfate do wonders for the body and relax the mind.

Directions for the Bath

2 Cups Epsom Salt found in most drug stores

Tub of warm water – the warmest you can tolerate

Stay in for 20 minutes and drink plenty of water before and after

Optional – add baking soda to the water to dechlorinate for improved health benefits

As listed on the Epsom Salt Council website, researchers and physicians list these health benefits:

  • Improved heart and circulatory health, preventing hardening of the arteries, lowering blood pressure.
  • Improved ability for the body to use insulin, reducing the incidence or severity of diabetes.
  • Flushed toxins and heavy metals from the cells,
  • Easing muscle pain and helping the body to eliminate harmful substances.
  • Improved nerve function by electrolyte regulation.
  • Relieved stress. Excess adrenaline and stress are believed to drain magnesium, a natural stress reliever, from the body. Magnesium is necessary for the body to bind adequate amounts of serotonin, a mood-elevating chemical within the brain that creates a feeling of well being and relaxation.
  • Reduced inflammation to relieve pain and muscle cramps.
  • Improved oxygen use.
  • Improved absorption of nutrients.
  • Improved formation of joint proteins, brain tissue and mucin proteins.

Make your Valentines Day Sexy and Healthy! And Fun for the kids too!

Lots of thought and time goes into planning a romantic dinner out.  Reservations must be made well in advance and most restaurants hike up their prices and serve you what they bought on special! They get to serve you a very expensive (not always healthy) 3 course dinner with wine and dessert.  It always sounds so good in theory but at the end of the evening what are you left with? I’ll tell you…a very full tummy, a wallet with a big dent and the only thoughts in your head are going to bed and I mean sleep. 

I’m not saying you can’t have a special evening but maybe you can celebrate Valentines Day in and bring the romance home.

Dinner In.

So skip the reservation, stay home and make dinner a romantic event! Turn off the TV, listen to your favorite music, have a glass of wine or make a special valentine cocktail with fresh fruit juice.  Then cook as a couple. Prepare a big healthy salad with lots of vegetables, homemade veggie pizza or even something quick and light on the grill. Don’t kill yourself on a meal with tons of preparation.  This should be fun, easy and sexy!

Now, the good stuff.  After a light healthy meal with great company its time for some healthy chocolate indulgence!

Guiltless Warm Flourless Chocolate Cake

Ingredients

Cooking spray (make your own)

6 ounces 70% dark chocolate
1 tablespoon orange zest
1 teaspoon vanilla extract
2 very ripe bananas
1/4 cup roasted sweet potato
1/4 cup honey
1 whole egg
3 egg whites

Directions

  1. Preheat oven to 350 degrees F.
  2. Place 8 (4-ounce) ramekins or custard cups on a large baking sheet. Spray with cooking spray and set aside.
  3. Combine chocolate, orange zest and vanilla extract in a medium bowl over hot boiling water. Whisk until chocolate is completely melted.
  4. Puree bananas, sweet potato and honey until smooth.
  5. Remove the melted chocolate from heat and fold over banana puree and 1 whole egg. Mix well
  6. Whip the egg whites until soft peak
  7. Slowly fold egg whites into chocolate mixture.
  8. Spoon mix into ramekins, filling them almost to the top.

Bake for approximately 6 to 7 minutes, remove and serve. Warm center of the chocolate should be soft.

 Cooking Spray Ingredients

  1. 1 part olive oil (or your choice of oil)
  2. 5 parts distilled/filtered water
  3. 1 misting  spray bottle

Instructions

Mix in your spray bottle 1 part oil to 5 parts water. Shake well and store in a cool dark place.

Roses

We all love roses.  They are beautiful and I love them but during Valentines they are super expensive or very cheap and don’t last very long either way. Rather than giving or expecting roses suggest an alternative, such as a fresh herb plant that smells great and can be used in cooking or a lovely houseplant to purify the air in your home.  Here is a great suggestion that involves rose, kids and a craft. That’s a Valentine Trifecta! Every child loves crafts and parents and grandparents love items made by their little ones.  Sit down and make these rose cards together!

Fun for the kids – Rose Cards craft

  1. 1 stalk celery
  2. Red and green tempera paint
  3. Blank note cards

Cut celery down to the bottom of stalk, dilute red tempera paint with a bit of water, put onto paper plate, dip celery in paint, and press onto a paper note card, leaving a rose shape!

Make sure you apply even pressure when you press down on the celery. Add glitter, green leaves and write a Valentine message such as “Be Mine” on the outside of the card. The inside is left blank for sweet love notes for friends and family from your child.

Great Kid Finds!

This week I wanted to share a couple of exciting kid related items that I recently came across. The first one is Bento Box lunches for kids. Lately I’ve been really struggling with my daughter to get her to eat fruits and vegetables. I really have to sneak them in or even resort to bribery at times….not good! Well late one evening while enjoying one of my favorite past times…surfing Pinterest – yes I probably need a “Pintervention”. I typed in “cute healthy meals for kids” and pins and pins of Bento Boxes appeared. They really are cute and healthy and more importantly very appealing to the discriminating eye of a picky five year old eater.

Bento Boxes make kids lunch healthy, fun and colorful. I love the idea of having the meal in one container with separate compartments, rather than two or three different containers and sandwich baggies. Bento lunches are meant to be pleasing to the eye as well as delicious and there are many ways to be creative while putting together a box for your child. Some people go all out when they’re packing a bento box. They design food art in the shape of hearts, trains, caterpillars, animals and even tv characters. There are many tools to use such as colorful silicone baking cups, themed food picks, cookie cutters and the actual container itself.

Next I recently came across Artkive in the App store. I am so excited about this app! I have two tubs filled with my daughter’s art work. I have never been able to throw any of it away and in kindergarten it seems all they do is make art! I have really stressed about this mounting clutter which my daughter is so very proud of. Well hooray for Artkive! This app digitally saves your children’s artwork and makes it easy to share with other family members and friends. You simply take a photo, tag it, and store your child’s artwork on the Artkive cloud. You can even create photo books from their art which is my next home project!

GapKids/DVF Collaboration

GapKids just announced their second collaboration with Diane Von Furstenberg. The collection will hit stores in April. I’m guessing there will be some adorable summer clothes and beach wear! Looking forward to picking up some pieces for my little Fashionista.

On a separate note, while researching this topic I found out Gap Inc. just purchased Intermix, a luxury boutique. Not sure what that means for either company maybe more style for Gap? And more affordable prices at Intermix? I doubt it! Hopefully some new designer collaborations at Gap… well a girl can dream!

A MOTHER’S TOP 10 HEALTH TRICKS

Hi Everyone!

I was flattered when Marzia asked me to write a guest post for The Healthy Housewives.  Of course the first thing I thought was ‘what should I write about??’.  Like Marzia said, I always have something to say.  However that makes it so difficult to narrow it down and choose one topic!  I asked some friends what I should write about and it was an overwhelming ‘fit after baby’ response, however Loren has just done a phenomenal job with that topic.  So instead I have decided to do my post on my favorite things.  My list of top 10 priorities in order to keep myself and my son in tip top condition from the inside out!!  I hope some of you will find these things easily incorporated into your lives.  I promise the benefits will be many!!!

So here we go with number one!  My top top health tip is ‘eat real food’.  That may sound silly to some, but it is literally the difference between surviving and thriving in this life.  When I say eat real food I mean cut out all the processed stuff.  I don’t mean just the box crap (definitely get rid of that!) but I mean the stuff that is raised and processed on factory farms or mass harvested on ginormous ‘farms’…blech.  Buy as much local, pastured, humanely raised, or organically farmed (wild-caught when it comes to fish) food as possible.  Not only are you supporting your local farmers and economy, you are feeding your body the food that it knows what to do with!  No extras you may not have bargained for!!

Number two in my bag of tricks is definitely coconut oil.  Yep.  Coconut Oil.  Seriously it is good for everything!!  In my house we use it for too many things to even list!!  A few uses would be for cooking or baking with, it is a stable oil for med/high temps…other oils such as olive can turn rancid at high temps.  I have used coconut oil on my son’s diaper rashes, I use it mixed with coffee grinds as a face and body scrub, I use it as a toothpaste (oil pulling), I use it as moisturizer, it is good to give to your four legged children.  It is anabolic and aids in fat burning.  If there is a magic food/supplement out there, this is it!!

Third on my list of must haves is Apple Cider Vinegar or ACV.  Another super food with many uses!!  I drink water with lemon and ACV every morning!  It is a natural appetite suppressant, lowers blood sugar levels, regulates pH levels, and helps detoxify the body.  I also use it regularly to condition my hair (the smell is strong while my hair is wet, but once dry the smell is gone!).  I have used it as astringent and in homemade cleaning recipes.  It is a must have in my pantry!!

Number four should probably be number 1!  It is so so important to drink clean water!!  This may seem like a simple task, but actually it has taken a lot of research and effort to make sure I get clean water for my family!  The best possible way to get clean water is to install a reverse osmosis filter in your home.  I also recommend a filter on your shower heads!  Next best choice would be an activated carbon filter, however this type of filter will not get rid of fluoride, which I avoid like the plague.  Then last I would say is bottled water.  I only choose pH balanced bottled water from my local health stores, it does get expensive though, so I just do it as needed.  This is one of my major major peeves….the fact that we have all the technology to have pristine water supplies flow from our faucets, yet the amount of contaminants and chemicals actually added to my water make it undrinkable in my opinion!

Fifth on my list is pre and probiotics!  If you I could recommend a must have supplement this would be it!!  We as humans have a delicate ecosystem going on inside of our bodies.  And in today’s environment filled with pollutants, stress, genetically modified foods, prescription drugs, etc etc, the ecosystem in our bodies really doesn’t have a chance without our calculated support!  80% of the human immune system is directly related to our guts.  Recent studies have also confirmed the gut/brain connection, which a huge leap for the health of future generations.  There are specific diets like WAPF, and GAPS protocol to help reestablish healthy guts in people with health issues.  We had to use these diets with my son in order to cure his food allergies (which seem to be all gone at this point!).  If you seem to be a pretty healthy person in general then you should just be able to supplement with probiotics.  You can do this with foods like yogurt, fermented foods (pickles, sauerkraut, kombucha), and then with the the actual powders or drinks, the higher the count and the more strains the better!

Obviously exercise is an important part of health, so I will make that my number sixExercise can come in so many forms.  I happen to love the gym.  It is my escape from reality.  For a couple hours nothing bothers me and I just lift and or do cardio.  For some people that is their worst nightmare.  But there are so many things that can be ‘exercise’.  Whatever you may enjoy, whether it be horseback riding, cleaning, running outside, or playing football with your kids.  I do recommend some sort of resistance training whether it be weights or leg pressing your toddler.  Not only does being active keep you healthy and your body looking good, it makes you feel good, and when you feel good you make better choices in almost every aspect of your life!  So get moving!!!

Seventh on my list will be protein.  I have been drinking protein supplements for at least a decade and the truth is for the first seven of those years what I was using was probably hurting me not helping.  I do recommend a protein supplement for ease.  I drink 2 smoothies each day and I always use a scoop of protein powder in it.  It is a quick easy meal and truthfully it satisfies my sweet tooth!  There are only a handful of protein powders that I will use now.  If I use a whey protein, I always buy Bluebonnet.  They use milk from New Zealand cows which are never treated with hormones and are pastured as cows should be.  But the number one reason I choose them is because they cold process the whey.  No chemicals or high heat for processing which means the protein is not denatured and rancid (as are most proteins on the market).  I also love the Garden of Life RAW protein line!  So we use both of those in my house!  My son loves them too!!

Okay, number eight on my list may catch you by surprise.  Cut out the gluten.  I recommend cutting it all out.  At least for 4 weeks, after the four weeks is over go ahead and reintroduce it minimally, like as a once a week cheat.  You will feel so much better in so many ways!  You will lose weight, inflammation will subside, your digestion will get better.  And probably for a lot of you when you eat it again you will feel awful!  I cut the gluten when I had to for my son (he had a mild allergy to it).  Now, every time I eat it (which is rarely) I break out!!  So you may be surprised what benefits cutting it out will have for you!!  And if you are really serious try going completely grain free!!!  We are completely grain free about 80% of the time in my house!

Alright, finishing up!!  Number nine on my list of favorite tips has to be my daily vitamins.  I don’t take a ton, but I do think what I take is important and people always ask me about it.  So I thought I should include them in this list!  My primary goal is to get what I need from food and sunshine, but I do believe that can be difficult sometimes.  My daily regimen includes a multi-vitamin, B complex, Adrenal support, vitamin D, probiotics, fermented cod liver oil, and super greens (which I put in my smoothies).  I choose brands that use raw organic whole food nutrients so all the co-factors are included in order to be the most bio-available.  You can read about the fermented cod liver oil and where to find it at this link http://www.westonaprice.org/cod-liver-oil/cod-liver-oil-basics#brands

Last but not least, number ten on my list of top tips is use the internet!  I get my best recipes from my favorite bloggers and I find so much motivation on pinterest.  I find the most interesting and thought provoking articles from the people I follow on facebook.  Knowledge is power and that includes when it comes to your body and your health!!  Obviously this comes with a disclaimer, DO YOUR RESEARCH!  Make sure the sources you find are reliable and trustworthy, and use common sense!

I hope everyone had a wonderful holiday season and New Year Celebration! I don’t know about y’all but I’m excited to get back to my regular routine!!! Yay!! Big sigh of relief!!
