Black Bean and Salsa Lettuce Wraps from Kathy

Happy Thursday Everyone! I wanted to share my recipe for black bean lettuce wraps with you.  I usually live on salad and love eating greens and veggies but sometimes during the winter, salad just doesn’t cut it.  I feel I need something warm and hearty. This recipe satisfies my love for salad with something warm, tasty and healthy!

Ingredients

For the Bean Filling Mixture:

  • 1 tsp olive oil
  • 1 small yellow onion
  • 1 clove garlic, minced
  • 14 oz can organic black beans, drained and rinsed
  • 1/2 packet Simply Organic taco seasoning
  • 6 leaves of organic bibb or iceberg lettuce

 For the Salsa:

  • 1 avocado, peeled and diced
  • 1/2 fresh jalapeno, seeds removed and chopped
  • 1/2 small fresh squeezed lime
  • 1/3 cup chopped cilantro leaves
  • sea salt and pepper to taste

 Instructions

  1. Prepare the salsa and set aside. Combine all ingredients in a bowl, mix well and add salt and pepper to taste.
  2. Heat olive oil in a large sauté pan over medium heat, add onion and garlic.
  3. Saute onion until soft.
  4. In a bowl combine the rinsed black beans and taco seasoning. 
  5. Add the beans sauté pan and simmer until well heated
  6. Layer beans and the salsa over lettuce and wrap tight. You can use a toothpick to secure until ready to eat.
