Delicious Quinoa Fried (not rice) Recipe

Kathy here and I wanted to share my recipe for Quinoa veggie fried rice. I love quinoa and knowing that its a superfood I look for places to substitute it everywhere I can!  Try this quick and easy recipe which is gluten free too! And you’ll have dinner ready in about 15 minutes.  Also, makes for great left overs!

Quinoa Veggie Fried (not-Rice) Recipe

Yield: 4 to 6 servings

 Ingredients

  • 1 Cup cooked Quinoa – I used whole foods frozen Organic Quinoa with vegetables.
  • 2 tablespoons organic canola oil
  • 1 (16 ounce) package organic frozen baby carrots and green peas, cooked
  • 1 small onion chopped
  • 1 tablespoon of minced garlic
  • 2 eggs, scrambled (optional)
  • 2 cups chopped cooked chicken or shrimp (optional)
  • Braggs Liquid Aminos (great substitute to soy sauce)

 Preparation

  1. Cook quinoa according to package directions. Set aside and keep warm.
  2. Heat oil in a large sauté pan over high heat. Stir in onions and garlic; cook until onions are soft. Stir in frozen peas and and carrots. 
  3.  Add in eggs, stirring quickly to scramble eggs with vegetables. 
  4.  Stir in cooked quinoa and optional meat. Simmer 5 minutes. Add chicken or veggie broth if needed.
