Hey Housewives!

I know this is a little late but wanted to share with you some recipes we had from our first official Healthy Housewives dinner part from last Thursday night. It was a great blend of all of our healthy lifestyle in drinks, appetizers, salads, main meal, and desserts.

First off, I want to say there are 6 of us Housewives. We all lead 6 different healthy lifestyles. Some of us live a plant based lifestyle, some of us are vegetarian, and some of us eat meat. Some of you will be able to relate to one of us. Some of you won’t. We do what works for our lifetyle, just as I am sure you do what works for your lifetsyle. No one’s healthy lifetsyle is better than the other. We do what works for our beliefs. So with that being said…

We started off the night toasting to the new cast of the Healthy Housewives. We finally have our 6 cast members locked in! So excited about that!

We toasted with champagne and freshly juiced apples. Not sure what you call that? I know that orange juice and champagne is called a mimosa. Maybe I will it an apple crisp. The taste of the fresh raw apple juice and the bubbly from the champagne made it taste so refreshing and sweet!

Brooke Berryhill brought the appetizers. She brought the baked pita chips with 3 different types of hummus. She had a regular hummus, beet hummus, and roasted red pepper hummus.

Kathy Hamilton brought a sweet salad. It was a spinach berry salad with a raspberry vinegarette dressing.

Shelly Mac brought a jimaca watermelon side dish.

2 lbs. watermelon, 1 lbs jimaca, 1 bunch of cilantro, 1 tsp cayenne pepper, and the juice of 2 limes. Peel and cut watermelon and jimaca in strips or chunks, In a large bowl add all ingredients and mix together.

I made the main dish, a white bean chili.

Danielle Hinson brought our favoeite part of the meal…DESSERT! She made a shakeology strawberry pie.

Buy a whole wheat gluten free ready made pie crust or you could make one. Bake 400 degrees 15 minutes. In blender blend 12 ounces firm tofu , 2 scoops of chocolate vegan Shakeology , 1/4 cup of almond milk and water mixture , 1/2 cup all natural peanut butter. Blend til smooth. Pour into shell. Top with sliced organic strawberries and refrigerate for one hour before serving! ENJOY!

The drink of the night was a freshly juiced appletini! It was super delish!
